Sunday breakfast


I love making a super tasty breakfast on a Sunday to enjoy whilst reading my current book, this week I made pancakes garnished with banana, grapes and golden syrup along with a banana and almond smoothie. 

I first had the idea from Jamie Oliver's recipe website but due not not having all of the ingredients he listed I adapted it to suit me. I will list the adapted recipe and ingredients below if you wish to try it. It's so easy and quick to make and you can adapt it to your tastes just like I did. 

For me there is something about having a relaxing delicious breakfast on a Sunday while reading my current book that is exceedingly addictive and calming. Perhaps it's because during the week I hardly have a second to myself and my morning are always so rushed no matter what time I get up. I'd recommend everyone to try this recipe and change the flavours to your particularly taste or fancy. 

Banana and Almond smoothie

Ingredients

  • 1 banana
  • 250ml milk
  • 1 tablespoon of runny honey
  • 3 tablespoons of ground almonds
Method

  1. Blend all ingredients together till smooth then pour into a glass.


Pancakes

Ingredients

  • 1 large free range egg
  • 1 cup of self raising flour
  • 1 cup of milk
  • a pinch of sea salt
  • olive oil
optional

  • grapes
  • 1 banana
  • golden syrup
Method

  1. Make the batter by adding the egg, flour, milk and salt to a mixing bowl and whisking it.
  2. Put the frying pan on for a minute to heat up then add a bit of olive oil to the pan.
  3. Pour in desired amount of pancake mix in the pan, I like to make small round ones, flip when ready.
  4. Once done on both sides repeat these steps with more mix until it runs out.
  5. Garnish your pancakes with your desired foods, I chose to add grapes and banana on top drizzled in golden syrup.
